I've been eating this salad just about everyday lately. It's fresh, delicious, easy, and healthy, so it fits all of my criteria for my day to day eats. The dressing is also incredibly easy and yummy, so I promise that if you try this salad, it won't be the last time you make it.
Everyday Goat Cheese & Cashew Salad
Salad:
spinach
hearts of romaine
red bell pepper
avocado
cucumber
sweet onion cashews (from fresh and easy)
herb goat cheese
I'm really bad about measuring, so I just listed everything that goes in and you can add more/less depending on your preferences.
Dressing:
1 part EVOO to 2 parts rice wine vinegar
*again...I'm bad at measuring, so it just depends on how big of a salad you are making, but make sure you have twice as much vinegar as oil
about 1 tbls of raw honey
about 1 tbls of brown mustard
a sprinkle of kosher salt
Whisk together and toss into salad.
