So what do you do when your mom let's you borrow her super duper powerful food processor? You make up crazy paleo deliciousness of course! I'm definitely not entirely paleo or entirely vegan, but I tend to bake using the principles of both. I think it just overall makes me feel more healthful when I'm "indulging" in said treats, and it makes me feel great about letting my little have all the "treats" she wants as well.
So as usual, I have no precise measurements for these recipes (sorry), but I will do my very best to guesstimate!
Paleo Vanilla Maple Granola
-about 1 1/2 cups (each) of raw almonds, hazelnuts, pecans + 1/4 cup of flax seed
(add those to your food processor and pulse until you reach a "granola" type consistency)
-pour nuts in mixing bowl and add:
-1/4 cup coconut palm sugar
-1/4 cup pure maple syrup
-1 tbls vanilla
-cinnamon (couple of shakes)
-dash of salt
-1/4 cup or so of unsweetened shredded coconut
-about 1/4-1/2 cup of coconut oil (in liquid form)
*basically you want all the nuts to be lightly coated so that they crisp up like granola in the oven
Mix together and spread out on a baking sheet. Bake at 325 for about 10-15 minutes, mixing around halfway through.
Raw Pumpkin Pie Balls
-place about 2 cups of raw almonds and 1 1/2 cups of pitted dates in the food processor
-pulse until everything is chopped VERY finely (like the consistently in a larabar)
-pour into a mixing bowl and add half a can of pumpkin pie puree
-a few shakes of pumpkin pie spice
-roughly 3 tbsl of pure maple syrup
-about 3/4 cup of carob chips
Mix together and form into balls. Place on parchment paper on a baking sheet and place in freezer for a few hours. When they're frozen, put them in a big ziploc and keep in freezer to snack on whenever!
*btw...I purchase all of my nuts, paleo flours, dried fruits, and carob chips from the bulk bins at Winco!
